Description

The Caspian roach is a wild species living in the Caspian Sea. It inhabits mostly shallow coastal waters and enters large rivers like Volga and Ural for spawning.
Salt-dried Caspian Roach (or Vobla in Russian) is generally eaten without sauces or side dishes. Many people like to eat their vobla with a glass of beer, which lessens the salty taste of the fish.
Vobla could be considered a raw fish, but, in fact, it is neither raw nor cooked, but rather salt-cured. It is soaked in brine for some days and then is thoroughly air-dried, which in the end denatures the protein, as a form of chemical "cooking".
This fish comes from the town of Astrakhan, a fishing capital of the Russian South. It was caught in late 2020. Though it can last very long without any special packaging or storing conditions, your fish will be vacuum-packed prior to shipping.
